Old Man Chili

Overview

This is a hearty but healthy chili. It’s a little different from most chilies. Instead of using sugar or ketchup to sweeten the chili, I use dried prunes and apricots. It sounds a little weird but I promise if you use the dried fruit, it will be the best chili you have ever had. You can use any proportion of prunes and apricots as long as it is about a pound. I recommend more prunes than apricots.

Ingredients

  • 1 lb of ground turkey
  • 1 lb of uncooked Italian sausage (preferably chicken)
    Onions, Fruit, and other ingredients.

  • 1 white onion
  • 3+ scallions
  • 2 16 oz cans of chicken broth
  • 1 16 oz can of tomato sauce
  • 1 16 oz can of diced tomatoes
  • 1-2 16 oz can of black beans
  • 1 16 oz can of kidney beans (optional)
  • 8 oz of dried prunes
  • 8 oz of dried apricots
  • 1+ tsp of paprika
  • 1/2+ tsp of chili powder
  • 1/2 tsp of salt

Prep Steps

  1. Take the sausage meat out of the skin. Cut along one side of the sausage and use your fingers or a spoon to move the meat into a bowl.
  2. Diced the onion and the scallions and place them in a bowl.
  3. Chop the prunes and the apricots and place them in a bowl.

Cooking Steps

  1. Partially cook the ground turkey and the sausage meat in the pot. It doesn’t need to cook all the way.Boiling Chili
  2. Remove the meat from the pot and brown the onions and the scallions in the juices from the meat.
  3. Add the broth, the tomato sauce, the diced tomatoes, the beans, dried fruit, the spices and bring to a boil.
  4. Once it is boiling , add meat.
  5. Reduce to a light simmer for about an hour
  6. Enjoy.

It was fantastic, just so you know. You can also add beer in there too, but for some reason he didn’t want to include it yesterday.

It should make about 6-8 servings if you use 2 cups of chili as each serving. Hope that helps!

I cook for my local firemen and they love chili so I am going to try your fabulous “Old Man Chili” and I’m sure they will love it as much as everyone else seems too.
They may want to include it in the next famous firehouse cookbook so I’ll be asking for autographs and pictures from you! haha
