Overview
Tortellini and Coconut sauce? Hell yeah! It’s delicious. Chicken would also go well in this meal. If you do decided to use chicken, cut them into strips, lightly brown the meat with mushrooms but don’t cook all the way, finish in the sauce. Cooking it in the sauce makes the meat a little more tender and has more of the flavor. This makes about 6 servings.

Overview
This is a quick and light breakfast meal. I like it more than regular poached eggs because the tomatoes and other vegetables give it a lot of flavor. This goes really well on a piece of whole wheat toast.

Overview
These burgers go well with a wasabi mayonnaise or a sweet chili sauce. I also recommend a chibata roll instead of a regular bun. I didn’t have any when I made these, but a little bit of rice vinegar would be great in the sauce. This makes about 6 patties.

Overview
This is a hearty but healthy chili. It’s a little different from most chilies. Instead of using sugar or ketchup to sweeten the chili, I use dried prunes and apricots. It sounds a little weird but I promise if you use the dried fruit, it will be the best chili you have ever had. You can use any proportion of prunes and apricots as long as it is about a pound. I recommend more prunes than apricots.
