apple chicken pizza

Overview

It’s a pizza with apples, onions and sausage.

  • pizza dough
  • 3 chicken sausages. (The chicken and apple ones preferably)
  • 1 apple (Granny smith or another tart kind. Also, if it is too ripe it will turn to mush.)
  • 2 red onions
  • 1/2 cup of Mozzarella
  • 1 jar of alfrado sauce
  • as much fresh rosemerry and thyme as you can handle ( I use a little over tablespoon. Be careful if you aren’t using fresh because the dried herbs are a lot stronger.

Prep Steps

  1. Cut the onions and the apple into strips.
  2. Cut the sausages into circles.

Cooking Steps

  1. Start caramelizing the onions in a frying pan.img_0679
  2. After the onions are caramelized, mix the apple slices and the herbs into the pan and mix.
  3. Role out the dough on the cooking pan.
  4. Cover the dough with with the alfado sauce and cheese.
  5. Top with the sausage pieces, onions, and apples
  6. Bake it.

Italian Thai Pasta

Tortellini and Coconut sauce? Hell yeah! It’s delicious. Chicken would also go well in this meal. If you do decided to use chicken, cut them into strips, lightly brown the meat with mushrooms but don’t cook all the way, finish in the sauce. Cooking it in the sauce makes the meat a little more tender and has more of the flavor.  This makes about 6 servings.

Ingredients

  • 1 cup of coconut milk
  • 1/2+ can of black beans
  • 1/2 cup of cream
  • 1 lb of mushrooms
  • 1 lb of shrimp
  • ~3 tbls of red curry paste
  • 1 lb of cheese tortellini

Prep Steps

  1. Slice the mushrooms.
  2. Peal the shrimp

Cooking Steps

  1. In a frying pan, heat some oil and mix the curry paste into it. I like it strong so I add  3 tbls of curry paste but you might want to start with 1 tbl and add more in the next step until you like it.
  2. Poor in the coconut milk and cream, bring to a boil, and let simmer for 30 min.
  3. Cook the mushrooms and add them to the sauce as it simmers.
  4. Add the 1/2+ can o black beans
  5. Start cooking the tortellini
  6. Cook the shrimp
  7. Once the sauce, the pasta, and the shrimp are done, mix it up.

tomato poached eggs

This is a quick and light breakfast meal. I like it more than regular poached eggs because the tomatoes and other vegetables give it a lot of flavor. This goes really well on a piece of whole wheat toast.

Ingredients

  • 1.5 lb can of diced tomatoes.tomato_egg_ingredients
  • 2 bell peppers
  • 4 eggs
  • 4 green onions
  • 1.5 tbl of red pepper
  • 1 tsp of cumin
  • 1/2 tsp of minced garlic

Prep Steps

  1. Cut the bell peppers into 1/2 inch squares.
  2. Chop the green onions.
  3. Drain the water from the can of diced tomatoes.

Cooking Steps

  1. In a frying pan, heat some oil and cook the bell peppers and the garlic.
  2. Add the diced tomatoes, the green onion and the spices.
  3. Cover and let simmer for 10 min.
  4. With a spatula, clear four areas on the pan of the tomatoes.
  5. Crack an egg into each of the four areas you created.
  6. Cover until the eggs are poached.img_00881

Ginger-Wasabi Burgers

Overview

These burgers go well with a wasabi mayonnaise or a sweet chili sauce. I also recommend a chibata roll instead of a regular bun. I didn’t have any when I made these, but a little bit of rice vinegar would be great in the sauce. This makes about 6 patties.

Ingredients

  • 1 lb of ground turkey
  • 1/2 cup of sticky rice
  • 1/4 cup of Panko
  • 1+ tbl of fresh minced ginger
  • 2 tbl of teriyaki sauce
  • 1 tbl of soy sauce
  • 1 tbl of honey ( or sugar)
  • 1 tbl of wasabi ( or horseradish sauce because that’s all wasabi is)
  • 1/4 cup of chopped green onions
  • 1 egg

Prep Steps

  1. Cook the sticky rice
  2. While rice is cooking, mince the ginger root and chop the green onions.
  3. Mix the ginger, teriyaki sauce, soy sauce, honey and wasabi in a mixing bowl to taste. I like mine a little spicy so I add a lot of wasabi.
  4. Add the green onions and the egg and mix well. The egg is there to help hold everything together as it cooks.
  5. Add the rice and the panko and mix with the sauce
  6. Add the ground turkey to mixing bowl and mix well with your hands

Cooking Steps

  1. Form the meat into patties and cook.

Old Man Chili

Overview

This is a hearty but healthy chili. It’s a little different from most chilies. Instead of using sugar or ketchup to sweeten the chili, I use dried prunes and apricots. It sounds a little weird but I promise if you use the dried fruit, it will be the best chili you have ever had. You can use any proportion of prunes and apricots as long as it is about a pound. I recommend more prunes than apricots.

Ingredients

  • 1 lb of ground turkey
  • 1 lb of uncooked Italian sausage (preferably chicken)
    Onions, Fruit, and other ingredients.

  • 1 white onion
  • 3+ scallions
  • 2 16 oz cans of chicken broth
  • 1 16 oz can of tomato sauce
  • 1 16 oz can of diced tomatoes
  • 1-2 16 oz can of black beans
  • 1 16 oz can of kidney beans (optional)
  • 8 oz of dried prunes
  • 8 oz of dried apricots
  • 1+ tsp of paprika
  • 1/2+ tsp of chili powder
  • 1/2 tsp of salt

Prep Steps

  1. Take the sausage meat out of the skin. Cut along one side of the sausage and use your fingers or a spoon to move the meat into a bowl.
  2. Diced the onion and the scallions and place them in a bowl.
  3. Chop the prunes and the apricots and place them in a bowl.

Cooking Steps

  1. Partially cook the ground turkey and the sausage meat in the pot. It doesn’t need to cook all the way.Boiling Chili
  2. Remove the meat from the pot and brown the onions and the scallions in the juices from the meat.
  3. Add the broth, the tomato sauce, the diced tomatoes, the beans, dried fruit, the spices and bring to a boil.
  4. Once it is boiling , add meat.
  5. Reduce to a light simmer for about an hour
  6. Enjoy.
